Pie in the Sky

Sometimes I’m in a cooking rut, and that’s one of the only times I’m grateful for Pinterest. I went with a variation of this tomato corn pie earlier this week, and it was a hit!

Since my weeknight dinners are usually more on the semi-homemade side, I used a frozen crust instead of making it fresh (I don’t actually like crust, so I have no desire to spend any more time than necessary on it).

We also had some fresh tomatoes from Pops & Nonna, so I used those instead of large ones.

I added spinach and feta with the cheese and tomato layer before the corn. Delicious!

An Ode to Poor Photography and Tinted Lashes

Most of the time, especially during the summer, I wear very little makeup. Some tinted moisturizer, a swipe or two of blush, mascara, and I’m out the door–sometimes I even skimp to just mascara and go.

In the last week, though, I’ve only worn mascara twice–even to go somewhere normal that requires makeup. What? Yep. My aesthetician tints lashes. I asked her about it last time I got a facial, and she said my lashes were perfect, so I made an appointment. My friend Momma Branam suggested before and after photos, so my iPhone and I worked out some really creepy photos to share.

You’re supposed to show up with no eye makeup on, so I started my snapping with the “full” makeup I had on before I headed in (the right photo is no eye makeup).

The actual application of the lash tint is pretty relaxing; you just hang out on the table while she works on the ol’ lashes. My eyes didn’t really burn or anything, although apparently some people’s do. I was warned I’d have a little bit of a heroine chic look going on when she sent me home, but I laughed it off.

I definitely had the last night’s makeup look going for a day or so after. Usually when I take Baby Gray to gym, I throw on mascara and go. Last week, I had to dig around to find some concealer, foundation, highlighter, and who knows what else (I ended up throwing about half of what I found away because it was so old; oops!) to make myself look enough like I got dressed on the present day to venture out into the public realm.

Now, though–oh, now! I am lovin’ every minute.

I have only worn mascara twice in the past week (I’m not wearing any make up at all in the photo), and I don’t have any plans to wear it much more than that any time soon. (I should consider taking photos that actually show my whole face, though; maybe the end result would be more noticeable.)

We came home for a quick nap, and I threw these s’mores bars together to take to Buck’s Poolside.

My marshmallows never got that “melty,” so my bars didn’t stick together quite this well (they were more of a toasty-crunchy). They were delicious, though.

We caught a few fireworks finales in the truck on the way home. It wasn’t quite the same as being there, but Baby Gray didn’t seem to mind. He sure slept good that night!

Boot shopping and the Fourth of July make for some good photos.

I laughed as we looked like a bunch of city slickers walking out of the store with new boots, a plastic hat, and another stick horse. You’d never know we’re an ag family with that kind of shopping.

Four, Three, Two…

The Fourth is coming! We’ll be at the parade in the morning and Buck’s Poolside for our usual afternoon, but I wanted to share some of my favorite recipes from the past.

Empty Handed

Back in the days before internet on our phones, when I was just a small-town country bumpkin, I was planning a wedding. Not like I’ve planned weddings lately, but my own. Sans Pinterest (thank goodness; I say that in all sincerity).

I was cruising along picking up some last minute items, and I happened upon a Costco (this was before they were as well-known as they are now). I knew it was a Sam’s-like establishment, but that was about all I knew. In I went. I loaded up my basket with all sorts of items for the wedding.

As I rolled through the checkout, they asked me for my card. Um, do what? No one asked for a card when I walked in. No one asked for anything. So, there I am in the checkout line with a basket full of wedding stuff and no Costco card. My options were pay for a membership or leave empty handed. I decided to just pay for the membership. Denied! Cash or check only. This was also back in the day before Dave Ramsey was big, so I was a member of the plastic brigade. Not to mention, I was a 21 year old college graduate with no job, so carrying that much cash was not even on my radar.

Out the door I went, empty handed. Ne’er to return.

Well, I did return, last week. I was much more prepared.

Destin-ation Vacation

Bright and early (well, not so bright–it was still dark) Friday morning, we grabbed RDG and M and headed to Destin. We drove and ate, drove and ate until we got there about dusk. (Fun fact: it would have taken us just a long to get to the panhandle of Texas as it did the panhandle of Florida. You’re welcome.)

We ate (again) and scoped things out a little before heading to bed.

Bright and early (well not so early–we were with teenage girls) Saturday morning, Mr. Gray cooked us breakfast and we headed to find a snorkel boat or some jet skis.

We found both, and Mr. Gray got us all set up to jet ski Saturday and snorkel Sunday.

Off we went! (Travel tip: if you rent a jet ski in Destin, rent it near the end of the no wake zone so you don’t waste so much of your rental time going slowly getting out of the harbor.) I couldn’t believe how clear the water was. I mean, we saw it from the car, but being in it, it was just so blue.

We headed to the beach next. White sand. Blue water. Just enough waves.

If I never go back to Port Aransas, it’ll be too soon–and too dirty.

We headed out for a fancy schmancy dinner Saturday night (have I mentioned we ate on this trip?) overlooking the harbor.

It was the night of the super moon, so we were able to check it out from the balcony as well as our night walk on the beach. It was absolutely gorgeous. It made that Louisiana realization that I forgot my big camera sting a little.  iPhone photos will have to do (even though they don’t do it justice).

Sunday morning, Mr. Gray and I were up and ready to head to the beach, but it was raining. We sat on the balcony and watched it rain before heading out. The waves were a little rougher when we got to the water, but it made for good boogie boarding. 

We grabbed some lunch and headed to the snorkel boat. We hopped on and headed out!

We snorkeled in two spots and then were back on the boat. They told us there was a chance we might see some dolphins, but we tried to see them on the jet skis the day before, so I wasn’t too hopeful. Wow was I wrong. We saw tons! They were splashing and playing, going under the boat, and getting so close to us. It was the coolest thing. As we were all snapping iPhone photos frantically, the captain suggested videoing instead of trying to get still shots. Duh. Oh well, M got this great photo of the dolphin jumping out of the water (apparently this is pretty rare, but they were all doing it). RDG thought she was videoing, but it wasn’t recording, and I had already put my phone away. I didn’t want to miss anything.

We were out in the Gulf to see them and the pass was really rough after the weather that morning. It was worth it, though (I might have been singing a different tune had we capsized).

Massages and dinner were up next then we headed to this little amusement park we had been seeing (think Celebration Station from back in the good ol’ days). Mr. Gray and M flew through the air!

RDG sat, watched, and tried to sympathize. 

They had a blast! Go carts and bumper boats were up next. So fun!

I wasn’t ready to come home Monday, but I was sure glad to see this guy Tuesday morning.
