Keepin’ it Fresh

In the summer, I love to eat cool foods. Cool, the temperature, that is. Nothing tastes better when it’s hot than bright, fresh veggies and a flavorful dressing! I usually throw some pasta in there, too. 

We had one of my favorite summer dinners last night. Enjoy the recipe for Tortellini Salad. Feel free to switch up any veggies or dressing you’d like!

The Reality of It Is

This was possibly the weirdest morning of my life. All my teacher friends (I have lots) and all my parent friends (I have lots of those, too) posted on Facebook and Twitter about their first day of school experiences. I didn’t have a first day of school experience. For the first time in my memory, I won’t go to school. At all. Mr. Gray will; he starts back Wednesday.

Please don’t hear me say I would change anything about my current situation. That’s not it at all. I’m exactly where I prayed to be. I’m doing what I’ve wanted to do all my life. I’ve got my son as my first priority all day. It doesn’t get any better than this! But, for a school-junkie like me, this is weird.

Maybe I browsed through the school supplies on my visit to Office Depot this morning; maybe I didn’t. 

You Might Be a Redneck…

… if this is what the cooking appliance for tonight’s dinner looks like. 

HAHA! I laugh every time I walk into the kitchen. Thank goodness we didn’t pay for it. 

Mr. Gray brought home a crock pot from his office a while back. It was in a nice carrying case, and it was larger than my original one. I put it away for later. 

When later came, I opened up the nice carrying case, and that’s what I found. A camouflage crock pot! Who buys that? (I mean, I’m cooking in it, so who am I to judge?) It does appear as though the heating element is a little more consistent than in my other crock pot, though. 

This Little Piggy

I used to watch Baby Gray sleep all the time. Now, he will only fall asleep when there are limited distractions, so he’s usually tucked away in his bed as he sleeps. Sometimes, though, I can get the back door open before he wakes up in his car seat. 

I love those times. I love his cute little sleeping face. I really love the way he was holding his toes this particular day. Such a cute little boy, even if I do say so myself.

Get Your Kicks

I mentioned yesterday that only 19 days remained until Fightin’ Texas Aggie Football gets under way! We’re down to 18 days! In celebration of the coming season, I felt the need to purchase new game day apparel.

Enter: my newest (tenth? eleventh? I know, it’s a problem) pair of TOMS. They’re exclusively at Nordstrom. They’re maroon. They’re TOMS. They’re sparkly. 

I wore them yesterday to make sure I could be in them all day on game days. Normally, this wouldn’t be a concern, but they are slightly different from the other TOMS I have. The sole is more substantial. They’re arguably heavier. After a full day’s wear, though, they were deemed just as comfortable. 

Another great pair of shoes, TOMS. Thanks and gig ’em!

Express Yourself

A few weeks ago (I know, I’m behind) we headed to Round Rock to Aggie Night at the Express game. Mr. Gray has been to several games, but I had never been to Dell Diamond. It was similar to the other minor league parks I’ve been to, though. 

Luckily, we had plenty of room around us, so Baby Gray was able to explore and play while we were in our seats. This was a great indication of what football season will look like this year (only 19 days until kick-off). He enjoyed the atmosphere and being outside, but baseball wasn’t exciting enough to hold his attention. I’m not sure how he’ll do with the tighter confines of Kyle Field, either. 

We walked through the lawn and kids’ area once the sun set and those areas were shady. Everything looked like so much fun! I can’t wait to take Baby Gray back once he can enjoy them. He got to meet the Express mascot, but he wasn’t too thrilled about it–that big dog costume was a little scary! 

Sadly, we didn’t get to stay for the fireworks. Baby Gray was tired, and it was time to head home. This definitely won’t be our last trip to the ballpark, though!

Symmetry

We have a symmetrical mouth again! Yesterday afternoon, I discovered tooth number four! 

This one didn’t bother him at all. It was just a surprise finding. He was laying upside down across my lap (that’s the only way I got the photo; he loves being upside down), and there it was!

Free-Range

We have these great little snack traps for Baby Gray. The idea is for the snacks to stay inside the lid unless they are removed by little hands. Baby Gray was in his high chair last week when I let him try it out for the first time. He did a pretty good job with it while in his chair. 

Tuesday, I decided he could try it out while he played and I cooked dinner. 

You’ll notice in this photo that the lid is not on the bowl. This is not the idea behind the snack trap bowl. You might also notice in this photo that he’s in a fence. About that: you try to cook dinner with free-range, extremely mobile ten-and-some-change-month old and an open floor plan. You’d want a fence, too. Plus, it contains the Cheerios.


Cheese, Please

I haven’t always been a fan of mac and cheese. The awful Kraft powdered cheese in a box did me in as a kid. Lately, I’ve started making homemade macaroni and cheese–it’s nothing like the Kraft version, and I actually enjoy it. 
This week, I went for a baked version a la Pioneer Woman. I changed it up a little, but I kept her basic idea. She added mustard powder, I went for plain yellow mustard (it was what I had in the house). She went with all cheddar cheese, I added some Parmesan and others. The principle was the same: make a roux, add some cheese, stir in not-quite-cooked macaroni, put into buttered baking pan, top with Parmesan, cheddar, and bread crumbs. Bake until nice and melty. Crank up the broiler and brown the bread crumbs.
Here is my initial, layered dish. It’s got the cheesy noodles topped with Parmesan, covered in cheddar, and then sprinkled with bread crumbs. For me, the bread crumbs are the kicker. They are absolutely necessary; Pioneer Woman didn’t add them, but I’m not one to question her. 
Yummy, cheesy goodness. Well, it should have been. I waited too long between the roux and the baking. It got a little more dry that I would have liked. Everyone who ate it liked it, though.
Just in case vague isn’t your style, here’s what I actually did. 
Baked Macaroni & Cheese
4 cups dried macaroni (I just used a full bag, I didn’t check to see how much it was)
1 egg, beaten
1/4 cup butter
1/4 cup flour
2 cups whole milk
1/2 cup heavy whipping cream
2 teaspoons (I just squirted a little) yellow mustard
1 pound cheese, grated (I used Sharp Cheddar, Mild Cheddar, & Fontina)
Salt, to taste
Seasoned salt, to taste
Ground black pepper, to taste
Bread crumbs (I use Panko)
  • Cook macaroni until not-quite-done. Drain (if you don’t drain it, it will continue to soak up water and loose its firm-ness).
  • In small bowl, beat the egg. Set aside. 
  • In a large pot or Dutch oven, melt butter and add flour. Whisk together over medium-low heat. Cook for five minutes, stirring constantly. Be careful not to let it burn.
  • Pour in milk, cream, and mustard; whisk until smooth. Cook until very thick. Reduce heat to low.
  • Scoop 1/4 cup of the cooked mixture and slowly pour it into the beaten egg; whisk constantly to avoid cooking the eggs. Whisk together till smooth.
  • Pour egg mixture into sauce, whisking constantly. Stir until smooth.
  • Add in cheese and stir to melt.
  • Add salt, pepper, and other desired spices to taste. 
  • Pour in drained, cooked macaroni and stir to combine.
    Pour into a buttered baking dish.
  • Top with Parmesan, Cheddar, and bread crumbs.  
  • Bake for 20 to 25 minutes or until bubbly and golden on top (the bread crumbs will probably not be browned yet). 
  • Turn the broiler on and brown bread crumbs for an additional 3-5 minutes.
