Pie in the Sky

Sometimes I’m in a cooking rut, and that’s one of the only times I’m grateful for Pinterest. I went with a variation of this tomato corn pie earlier this week, and it was a hit!

Since my weeknight dinners are usually more on the semi-homemade side, I used a frozen crust instead of making it fresh (I don’t actually like crust, so I have no desire to spend any more time than necessary on it).

We also had some fresh tomatoes from Pops & Nonna, so I used those instead of large ones.

I added spinach and feta with the cheese and tomato layer before the corn. Delicious!

  1. This looks yum! I would use a frozen crust too–we're busy enough during the week that I wouldn't even want to add making crust from scratch to that list.
